GOOD TO KNOW - BOURBON & WHISKEY:

All bourbon is whiskey, but not all whiskey is bourbon. Both are distilled from a fermented mixture of grains, known as a mash.

To be legally labeled as bourbon, a whiskey must adhere to a strict set of regulations:
- The mash must be composed of at least 51% corn.
- It must be distilled to no more than 160 proof.
- The spirit must be aged in new, charred barrels made of American white oak.
- It must be entered into the barrel at or below 125 proof.
- No flavors, colors, or other additives are permitted.
- It must be bottled at a minimum of 80 proof.

Whiskey, on the other hand, has more flexible production requirements. It can be made from various combinations of corn, wheat, rye, or barley. Unlike bourbon, whiskey is typically aged in pre-used barrels, which can include those previously used for bourbon, wine, or port. These barrels impart unique flavors and characteristics to the whiskey during its aging process.

A key advantage for distillers in Texas is that the state's extreme temperature fluctuations accelerate the aging process. The dramatic weather changes cause the whiskey to expand and contract more rapidly within the barrel, which speeds up the extraction of flavors and results in a more mature spirit in less time than in cooler climates. U
ltimately, the strict criteria mean that only a whiskey produced in the United States that follows these specific rules can be called bourbon, a principle similar to how only sparkling wine made in the Champagne region of France can be called champagne.

GOOD TO KNOW - MEAD:

Mead is an alcoholic beverage made by fermenting honey with water. It is one of the oldest known alcoholic drinks, with a history that spans thousands of years and is found in the traditions of cultures all over the world, from ancient Greece to Viking societies. Mead characteristics can vary widely depending on the ingredients and the fermentation process:
Primary Ingredients: The basic components are honey, water, and yeast. The type of honey used has a major impact on the final flavor.
Taste Profile: Mead can range from very dry (not sweet) to semi-sweet or very sweet. It can also be still, carbonated, or sparkling.
Alcohol Content: The alcohol by volume (ABV) can vary significantly, from a light beverage similar to beer (around 8% ABV) to a strong drink comparable to wine (12-20% ABV).

Beyond the basic recipe, mead often has additional ingredients to create different styles: Melomel: Mead fermented with fruit or fruit juice. Metheglin: Mead fermented with spices, herbs, or vegetables. Braggot: Mead made by fermenting honey with malted grains, giving it beer-like qualities.

Is mead a beer, wine or spirit or? Mead is a distinct alcoholic beverage that doesn't fit neatly into the categories of beer, wine, or spirits. It is not a beer because beer is made from fermenting grains (like barley or wheat), while mead is made from fermenting honey. It is not a wine in the traditional sense, as wine is made from fermenting fruit (specifically grapes). However, because mead is made by fermenting a sugar source and typically has a similar alcohol content, it is often colloquially referred to as "honey wine." It is not a spirit because spirits are made by distilling a fermented beverage, and mead is not distilled. Essentially, mead is in a category of its own. It's an ancient beverage that stands apart from the more common alcoholic drinks due to its unique primary ingredient.
